Sustainability is practiced in our food preparation and food preservation. We utilize every piece of an ingredient possible so that even the pieces that usually get tossed away flavor our stocks or starches, get mixed in with proteins, or garnish a plate. The central premise for Sullivan Scrap Kitchen is that we use the “scraps” from our fine-dining catering menu that have small imperfections or are unused to make delicious sandwiches, tacos, burgers, or salads.

We offer both non-alcoholic and alcoholic drinks for you to enjoy with your meal.  Like our food, we aim to utilize brewers, distillers and winemakers from the local area to get you a true taste of Colorado cuisine.

The process:

One of the most popular catering dishes we cook at TBD Foods is a 72-hour smoked brisket. But we only serve the flat of the brisket to our catering guests. Since we still have the point of the brisket leftover, we grind that up into our burger mixture and create delicious smokey burgers for our Sullivan Scrap Kitchen guests.
